Suifuan Soba Noodles (Mito City)
Suifuan makes their soba noodles using Hitachi Akisoba buckwheat flour produced exclusively for them by just three farms in Ibaraki. The buckwheat is ground using a traditional stone flour mill and the dough for the noodles is hand-kneaded.
Suifuan’s must-try dish and our top-pick for first time visitors is cold soba noodles served with a soy-based dipping sauce, duck meat and vegetables.
